Chili
I am supposed to be starting turkey week but I am going to put on last soup on here as well because it's cold and rainy tonight.
1lb ground beef
2 cans whole tomatoes - crushed
2 cans light red kidney beans
1 cup onion, chopped
1 cup chopped bell pepper (optional)
1 - 2 tbsp chili powder
1 - 2 tsp black pepper
1 - 2 tsp salt
1 tsp cumin
1/4 tsp garlic powder
1/2 tsp cayenne or red pepper to taste
NOTE: Be careful, flavor intensifies during cooking. Chili powder, black pepper, salt and cayenne pepper have ranges for amounts. Start at low end and work your way up. Top end will light your mouth on fire!
Brown ground beef in pot big enough to hold chili. When browned, drain fat. Saute meat with onions and green peppers a few minutes until vegetables are tender.
Add tomatoes and seasonings and simmer 20-30 minutes. Add beans. (You may drain them if you prefer.) Simmer 20-30 minutes more until desired consistency.
NOTE: You may also combine browned meat and other ingredients in a crockpot and cook it all day.
